GEL is simply the new launcher (with various fun things that I will not cover here) released with 4.4, but it’s just standard on Nexus 5. If you have Nexus 7 (both variants) and Nexus 10 and so, you need to download and install it. It’s just a must on any nexus device as it simply makes it look like I think 4.4 SHOULD look.
Of course talking about a Nexus 7 2013 with 4.4 . This isn’t enabled by default as in 4.2 and 4.3, so you have to enable it yourself. And it’s in a bit strange place (Display I looked in first).
It’s pretty similar (the same really) method compared to 4.2 and 4.3.
Settings > About tablet, press you tap Build number Seven (7) times. It will start counting down after 3.

Instead of using usb in mass storage mode like on the older phones, most/all htc phones (and all Nexus devices) from 2012 (android 4.1 and up) and onwards uses MTP mode for usb connections.
Yes, it DO locks very different now. You can’t set a lock screen theme under Personalize, but that doesn’t mean that you can have widgets on it or show missed calls and such on it. Edit: it looks the same way on 4.4.2/Sense 5.5. Edit 2: but not in Sense 6

SInce 4.2 the privileges for setting locale changed and you either need a rooted a phone or grant the privileges with tools from a computer.
This is done on a regular HTC One, it’s not rooted or changed in any way and the process shown here will not alter anything on the magnitude like root.
Google Keep is simply an app to Keep your notes in, and since it now is a part of Android 4.4, I think that more and more will use it. I use it ALL the time myself, since my I would lose my head if it wasn’t attached the way it is.
So, what is Google Now really?
Google says “your information when You need it”, and that is pretty much what it is and does. If you have done a google search on your chrome desktop browser (important, since you need to be logged in with the same google account as on your phone), like about an address or pharmacy or so.
Like about your One or whatever it is, this will give you needed information like what type of One it is and so on. WIll show your IMEI and so on, it’s very useful if you want to have all phone info in a file (just copy and paste into a text or word document).
